We want to give you a taste of our location where possible with every bite. We spend our downtime finding suppliers, experimenting on dishes, connecting suppliers together, and creating and tasting great drinks, not a bad time to be working here! Our produce where possible is sustainably sourced from within the county. Our meats are from North Clare, vegetables from our own Armada Farm and Moy Hill Farm, we use local goats cheese, the famous Burren smoked salmon, local beers, sea veg from across the bay, local oysters, crabs, and sustainable fish, to mention just a few. We’ve also created our very own whiskey and Mist + Moss gin, which is the first gin made using wild Irish juniper and botanicals that grow in the Burren. All of this is combined with our hard-working team in creative dishes and drinks, across our uniquely styled food outlets which include the Pearl restaurant, Ocean Bar and Bistro, Johnny Burke’s pub and Banqueting.
