We want to give you a taste of our location where possible with every bite. We spend our downtime finding suppliers, experimenting on dishes, connecting suppliers together, and creating and tasting great drinks, not a bad time to be working here!   Our produce where possible is sustainably sourced from within the county. Our meats are from North Clare, vegetables from our own Armada Farm and Moy Hill Farm, the famous Burren smoked salmon, local beers, sea veg from across the bay and low-impact seafood, to mention just a few. We’ve also created our very own whiskey and Mist + Moss gin, which is the first gin made using wild Irish juniper and botanicals that grow in the Burren.  All of this is combined with our hard-working team in creative dishes and drinks, across our uniquely styled food outlets which include Johnny Burke’s pub and the all new Aileen's Restaurant, Ocean bar and the Pearl Suite.
